ci: nespoléhat na Node.js na runneru

Runner běží v host módu bez Node.js, takže actions/checkout selhal na
"Cannot find: node in PATH". Checkout se dělá přímo gitem a quarto se
volá plnou cestou, aby nebyl potřeba ani GITHUB_PATH.
